Your Meatless Monday Meal Plan

You won’t miss the meat when you host a Meatless Monday dinner party this winter.

True story: Meatless Monday has been around longer than your NYC lease (and definitely longer than your house plants). This cultural phenomenon actually dates back to 2003, when the catchy slogan “one day a week, cut out meat” was intro’d as a public health awareness campaign. Ok, enough with the history lesson. Whether you’re looking to participate in Meatless Monday for health reasons, environmental reasons, or to give your wallet a break from the grass-fed purchases at your local butcher, there is literally no downside to saying “thank u, next” to meat one day each week. And that day just so happens to be Monday, the day when we normally don’t have evening plans and tend to veg out on the couch (vegetable pun intended).

So here at Bashed, we started to see Meatless Monday not only as an opportunity to do something good for our bodies and the environment, but also as an opportunity to give our friends something to look forward to on a Monday. Hence, the Meatless Monday dinner party was born. It’s an excuse to entertain on the quietest night of the week, and to stretch our culinary muscles by focusing on the bangin’ veggies that we picked up at the farmers market. Who knows, the Meatless Monday dinner party may even become a monthly occurrence on your dinner party circuit. We rounded up our favorite meat-free recipes so that you can host your Meatless Monday dinner party without hesitation (and with extra greens and fiber).

Lentil and Mushroom Stuffed Acorn Squash

There is just something about a dinner party where everyone gets their own, individual dish as opposed to serving family style that we just can’t get enough of. These gorgeously stuffed acorn squashes feel both hearty and cozy for winter, but also bursting with flavor. The lentils will keep your guests full in lieu of meat, and the mix of fresh sage, rosemary, and thyme adds that perfect bright bite. Serve these alongside a kale salad with pomegranate seeds for hint of sweetness.

Crispy Eggplant Pizzas

We’ll take the vegetarian pizzas please (hold the ‘roni cups). Not only are we 1) pizza fanatics and 2) eggplant fanatics, but we happen to love a DIY dish at a dinner party. Enter: these crispy eggplant pizzas. You can prep and bake the eggplant in advance, and have guests choose from a variety of add-your-own toppings when they arrive. Our favorites are fresh basil, a variety of cheeses (think parm, ricotta, and smoked mozz), caramelized onions, and toasted pumpkin seeds.

Citrus Salad with Fennel Vinaigrette

Have you ever been so obsessed with a recipe element that you want to add it to all of your recipes? That’s how we feel about the sesame clusters in this flavorful salad. They balance perfectly with the tart citrus, and we love adding sliced avocado and hemp heart to round out the meal with healthy fats and veggie protein.

Vegetarian Pho

Is this pho real? Take a trip to Vietnam by way of your kitchen with this insanely comforting Vietnamese soup dish. The traditional beef and fish sauce are subbed out with a rich, aromatic veggie broth base, and the noodles and hearty garnishes make this a complete meal in a steaming bowl.

Red Beans and Rice Salad

In honor of our beloved upcoming Mardi Gras, we love this nod to NOLA cuisine. It has all of the classic elements of creole cooking, and the combo of fiber-filled beans with starchy rice will fill your guests up in no time. Bonus points if you serve this alongside a New Orleans-style sazerac.

Tofu Masala

We’re not gonna lie, we’re a sucker for a good chicken tikka masala from our local Indian joint. But with chicken off the table this Meatless Monday, we’re all about subbing in the protein-rich tofu. This recipe has all of the incredible flavor of the chicken version, and when served over steaming basmati rice, you won’t even miss the bird.

Roasted Berbere Vegetables and Chickpeas

Sweet potatoes, cauliflower, chickpeas… what’s not to love here? Even better is the fact that you throw all of these goodies on sheet pans and the oven does the work for you. We’re into serving this spicy mix over a bed of raw spinach and farro and dressing it with some fresh lemon juice to make it a salad.
