7 Slow Cooker Recipes We'll Happily Hunker Down For This Winter

Our seven favorite slow cooker recipes that feed a crowd for next time you’re hosting in 2019.

One of the biggest things that we’re focusing on in 2019 is working smarter, not harder (yes, we know this is a cliche y’all but go with us!). This applies to how we start our days (that 10 minute morning meditation), our workouts (more intense, less frequent), and also to how we want to entertain in the new year. That’s why the idea of “set it and forget it” with our trusty slow cooker is endlessly appealing, and the perfect hack for pulling together a dinner party without sacrificing our day to cooking for it.

Often relegated to the back of the highest kitchen cupboard, it’s time to pull out that slow cooker and let it do the work for you next time you’re hosting. We rounded up the absolute best slow cooker recipes for feeding a group, especially during those chilly winter months when hibernation seems imminent.

Brown Sugar Garlic Chicken

Can we talk for a minute about how this recipe is just five ingredients?! Not only will you have mouth-watering chicken (we added siracha for a bit of heat) in a matter of hours, but it is literally a cinch to prep for and make. Serve it alongside a crisp and cool napa cabbage slaw and you’ve got yourself the perfect dinner.

Cajun Stew

With Mardi Gras just around the corner and no NOLA travel itinerary in sight, we’re planning to host a New Orleans-themed dinner party this March, and this Cajun Stew is the main attraction. It’s chock-full of shrimp, andouille, and okra, and is best served alongside a classic sazerac. Literally NOLA in a bite (and a sip).

Puttanesca Pizza

Pizza? In a slow cooker? Say it isn’t so! We love a slow-cooker pizza when entertaining with 3-4 people, and this recipe has briny capers and olives on top alongside fresh parsley for a fresh take on ‘za. Pair this pizza with a big Italian antipasto salad and you’re good to go.

Chicken Chile Tacos

While we pretty democratically love all tacos, there’s something about that melt-in-your-mouth shredded meat that makes some tacos stand out from the crowd. Enter: these chile chicken tacos. The meat will fall off the bone from making it in your slow cooker, and you can choose any selection of toppings that your heart desires (just please don’t forget the cilantro, jalapenos, and a marg).

Beef Bourguignon

Three words: hearty winter classic. Another one: delicious. While we love Julia Child’s version of this essential recipe, it’s crazy work intensive and we don’t always have hours to stand over the stove. In your slow cooker, you get the same incredible flavors with a fraction of the prep time. Serve your guests a great French red wine alongside it and you’re golden.

Corned Beef and Cabbage

We may not drink green beer any longer, but you better believe that we want to be celebrating St. Patty’s Day with some Irish corned beef and cabbage. The even better news? You can make this dish in your slow cooker and it’s absolutely brilliant. Pair with a frosty Guinness and your guests will be feeling extra lucky.

Triple Chocolate Brownies

When we first got up on the slow cooker game, we started with soups and braised meats. Moved onto pizza. Experimented a little bit more. But never in our wildest dreams did we think that we could make dessert in our trusty slow cooker. Think again! You can start these fudgy brownies a few hours before guests arrive and not only will the smell be intoxicating, but you’ll be able to serve them nice and warm alongside vanilla ice cream, right from the slow cooker.
